The Pheasant Philosopher’s Christmas Diaries: Getting ahead with Christmas, a Duo of Sublime Stuffings

Things which are time consuming relating to the Christmas Lunch are far better done early and the advantage of a good sized freezer makes preparing for Lunch extremely simple indeed. I like to serve two stuffings. One meat, and cooked separately from the bird, and one to stuff in the neck cavity, to take on…

A bouquet from the hedgerow, which is at its most beautiful at the moment, another week or two and it’ll all be cut down by the large council machines 😞 - such a beautiful evening for a walk. Blowing away the cobwebs with a few days @ricksteinrestaurants in beautiful Padstow, celebrating our 17th wedding anniversary….time certainly flies! Last night’s supper at Stein’s Café was delicious, and, despite it being exceptionally busy, the service was outstanding. The most beautiful (empty) Blackbird’s (?) egg nestling amongst moss and wild strawberries in the woods this morning. Such a vibrant colour, a real treat to see. Beautiful blossom on this morning’s walk. Our apple tree hasn’t started blossoming yet, although our pear’s is all but over. This lonely, little wild tree, from beside the footpath, probably originated in somebody’s packed lunch, but what colours! What a view - feel so blessed to live here! I literally had one foot in England and one in Wales for this shot… I’m the first to admit that I have struggled with anxiety issues for years, decades, in fact - there have been ups and there have been real downs, but I can honestly say that at this point I can finally claim a degree of happiness. This isn’t an ad but I’ve been taking this supplement by @numindwellness for several months and it’s been totally fantastic. A little packet of 5 tablets taken in the morning covering all essential vitamins and minerals, magnesium, ashwaganda (amongst other things) for mood improvement and one capsule with lavender and lovely sleepy things…..it’s actually been rather life changing! So I just wanted to share. Combined with time spent in the country surrounded by nature and a loving family, plenty of good food and living in the moment….I’m finally winning at life. Had to try out my new @skandinavisk candles - I also treated myself to the diffusers - they all smell divine…I love the ritual of candles; coming home after a day out, making a hot cup of tea and lighting a few candles always cheers me up. What are your little rituals to get you through the day? Wishing everyone a very Happy Easter 🐣 This year I kept it local with a selection of delectable delights from @choccotastic in Ledbury. It’s so important to support local businesses…..again it’s all about quality over quantity (btw those hot chocolate spoons are really super…and, sadly, already devoured by my son) Our little pear tree is in full blossom, and a mental note taken to repaint the old house this year. What a beautiful Easter Saturday - it was my birthday yesterday so a celebratory weekend all round. What are your Easter weekend plans?
